I find this product produces a softer chewy noodle when I make my own. I have to reduce the NOW brand by half (which I also like), but I do not like to cook it long at all. I prefer this brand for noodles, as they do not get squinchy (too firm), and remain chewy. I like the NOW brand for cold applications, such as slices for dipping. I've been using both, and I like both for different reasons.

DO NOT BUY THIS BRAND....did not have the thickening power of the NOW brand....had very disappointing results when used in previously very successful recipes.
Returned to the NOW brand, and my low carb dumplings, noodles and gnocci now are back to the firmness that I loved when I first used the NOW brand. Did a side by side test with 1 tsp of each and 2 Tbs of water...no comparison. This powder resulted in a far less firm mixture. Threw the whole thing out. Lesson learned.
