September 27, 2019Reviewer: Madeline in Florida* I really like this pasta. Being a diabetic pasta has been a dietary no-no. This is chewy which some people don't enjoy, but it is what I like about it. It holds up in sauces and soups. Good value for the money also.

June 25, 2018Reviewer: Marguerite in Arkansas* I bought this to make pasta salad because of the lower carbs. I haven't eaten pasta since Nov when I was diagnosed with diabetes. I found out that pasta sends my blood sugar through the roof. The taste is similar to wheat pasta. The texture is very chewy, but the more I ate I got used to it. It sure beats not having my pasta salad in the summer. When cooking it I found that It takes a lot more water than regular pasta. I had to add more water to the pot. Next time I will use a larger pot with more water.

February 22, 2018Reviewer: David in Missouri* Given the fact that I rated this only one star, it should be obvious that I was not pleased with the product. I'd like to have given it zero stars because that is what it really deserves. This stuff takes forever to cook--and when it is cooked, the texture can best be compared to a rubber band--with about as much flavor. It doesn't hold a sauce well--so it is impossible to improve the flavor. I much prefer the Nutriwell line of pasta products by Ciao Carb to this Proto Pasta line, as they actually cook and taste like pasta should.

April 30, 2014Reviewer: Pamela in Virginia* I like this pasta and will buy it again. The flavor is neutral, but the texture is slightly rubbery. A single serving is very satisfying. (I normally want multiple servings of regular pasta -- so, I'm happy to find a low carb option that quenches my craving instead of feeding it!). I topped my bowl of pasta with Parmesan cheese and Bella Vita spicy pasta sauce. The result? A tasty, quick and easy meal option that I can feel good about!

I'm diabetic and saw no rise in my blood sugar after eating a one-cup portion of Ciao Carb fusilli. This is awfully damn exciting after four years with no pasta in my life. (Dreamfields claims to be low carb, but it is NOT. It sent my blood sugar through the roof and I had to throw out six boxes.) I'm back here today to order more Ciao Carb products.
