My latest order I noticed the Elbows when I cooked them had many broken pieces after cooking, just mush. I wrote to this company and they replied that they are now making the ELBOWS THINNER because people were complaining they were taking too long to cook so I need to cook them less (??!!). In addition to them being thinner, many in the package look like HALF of a regular elbow with lots of broken tiny noodle pieces! I still get mush when I cook these, even if I under cook them (which they are pretty firm to begin with) I still gets lots of broken pieces!! I will not be buying these again... it's an epic fail. There are a few out there that I haven't tried yet, but in general, we have to compromise on something, whether it's taste, texture, or whatever. I must say that, while this 'pasta' is still not "pasta", it's a good compromise. The texture is only slightly off, but very similar to al dente pasta. The taste is not distracting, so while it doesn't quite taste like "pasta" if you don't think about it, it doesn't scream at you that it's not pasta.So if you can make a good gravy (sauce), you're in business. I first bought the shells, then bought the spaghetti. I would re-order both. BTW - you can make a killer "mac and cheese" with queso!This review is specific to Low Carb Pasta, Spaghetti

August 27, 2021Reviewer: Robert in Maine* I have concluded that there is no perfect pasta substitute. I have tried zoodles, spaghetti squash, hearts of palm, tofu, and of course Konjac, ultimately sampling the Great Low Carb Bread Company product. I have used the spaghetti noodles for Italian dishes, and the elbows for a passable mac and cheese. Is it a one for one sub? No. But it is a suitable sub and the closest thing I have found to the real thing. I boil it much longer then directed to get the desired texture, and when sauced, it makes an enjoyable meal. I am not strict Keto, so I am not against a slightly higher carb content. If I find something that I think has a more pasta like texture with a couple more carbs, I will try it. January 27, 2021Reviewer: A customer in Maryland* I ordered the elbows and to my surprise, they are great. I cooked for 8 minutes then rinsed in cold water to stop the cooking. They have a nice bite and the taste, IMO is the same as traditional pasta. I used it to make macaroni salad. This gets a big thumbs up!

However, Low Carb Pasta is legit and makes a great replacement for italian style noodles. I've very successfully had the fettuccine in scampis & carbonara and I made a great batch of homemade mac & cheese with the elbows. The pasta is a little harder than regular wheat pasta (more al dente style) but this has been great in the mac & cheese which has also been frozen & reheated without going all mushy.

I followed the suggestions of others and let the pasta boil for 20 minutes. I was truly impressed by its toothsome texture and great taste! Although it was ever-so-slightly different from high carb spaghetti, it was delicious in its own right! In fact, I went back for seconds, then thirds! My wife was equally impressed. I could have ordered this from amazon. I'm a prime member there. But the price at netrition was just about the same, and netrition takes far greater care in packaging it products. September 20, 2019Reviewer: A guest* This pasta from Low Carb Bread Company is really great! The texture is very much like regular pasta as is the taste. There is a slight difference in both but I honestly don't think that it is very noticeable.
This is so great to have on hand when you are craving noodles. I use the elbows for a low carb macaroni and cheese and I use the rotini shape when I make spicy sausage pasta. I'm very satisfied with this pasta. The only negative for me is the high price. For that reason, I don't purchase these all that often, however I will continue to purchase them every once in awhile because they are good and do help me to deal with my pasta cravings!
Also, the 2 latest times that I have ordered the elbow shape, half of the bag has been crushed up noodles. The box from Netrition was padded and packed well so I don't think it was their fault. Maybe they are coming this way from the manufacturer? So that's a little disappointing... The rotini shape has been fine.

Yes, it is pricey but if you want a treat from eating all meat and veges, you can make some great shrimp alfredo with Fettuccine. I love their bagels too. Yes, it takes a little trial and error. You have to cook the pastas longer than you would your flour based. I also cook in overly salted water.

They expand to a good size when cooked and get you full. Cook them long enough so they’ll be soft and you’re set. I really like the macaroni noodles and rotini, I’ve tried the fettuccine and it doesn’t stay in it’s shape, maybe I added too many at a time. I really recommend these though for low carb dieters or anyone trying to limit refined carbs.

I bought it to try as the Fiber Gourmet spaghetti has been unavailable for 6 months now, though they still have the elbows and penne.
This just wasn't good enough, and very pricy at that. Have half a bag left and going to try do a 50/50 mix with spiralized zucchini and see if that is a more pleasant option.

I made tuna (1/2 can to 4 oz pasta) salad w/onion, celery and a mayo/mustard dressing. It is fabulous! The pasta of itself cooked in salt water has a grainier texture with no flavor. It takes on the flavor of your dressing. And you cannot distinguish the different texture from reg pasta in the salad. This is why I wanted to try it - to make macaroni salad. Here is how I make a single serving - I start with the serving bowl and crush a serving's worth into the bowl. I cover with water and MW for 3 minutes (but I will likely reduce that to 2 min). I drain the water and pour over low carb pasta sauce. I have cooked hamburger in the freezer, and I crumble some on top. I put shaved parm on top of that, and MW for an additional 3-4 minutes. I add red pepper flakes and serve. The entire process takes about 6 minutes and yields excellent results. It cooks up like normal pasta, no strange after-taste, not slimy at all and best of all, it's really, truly Low Carb! I only wish they had more pasta-shape options, Lasagna or Spaghetti would be over the top.

Instead of taking the 10 mins to cook that the first few bags did, the next bag from new order began to fall apart after about 3 mins and were kind of like sawdust and a MUCH lighter color. I tried again at about 1 1/2 mins and tho not dissolving, still not edible. I don't know if the recipe changed since I got the first few bags or a bad batch or what, but at $7.99 per bag I wont be purchasing this again. It does taste the most like regular pasta of any of the other brands i have tried. None of which I would every buy again... But this one, I have added to my monthly Netrition shopping list. There is almost nothing that comes from The great Low carb bread Company that I don't like... this company is a godsend for me!

I cook it a few minutes longer than the package instructions state to achieve an "al dente" texture. Made some Rotini with Alfredo, shredded parm and chicken thighs for dinner and it was a hit. My bf and I have been doing low-carb since April and started trying to find a variety in food for us to eat.
When I looked at the ingredients, I didn't have high hopes (pea protein?). One thing though - directions say to boil for 10 minutes. I cook mine for about 20 minutes on full boil and it does the trick.
I plan to buy another and also check out the ThinSlim ones also, but this is a keeper!

I tossed the cooked noodles with a homemade Alfredo sauce and my husband (who is not on a low carb diet) had no idea that I hadn't used full carb pasta until I told him. The package says to cook 8 minutes or keep tasting it until it is the texture you like, but not to overcook because it can get mushy. I cooked it about 12 minutes and it never did get mushy. The texture is different than regular pasta, more "al dente," but it was tasty considering it is low carb; and did NOT cause me any digestive problems, which a lot of low carb pasta & bread products do.
